Gracie(a)’s Granola

I made this super easy granola for my niece Gracie who just started college in East Texas and happened to have a birthday while I was visiting in Dallas.  Me & Mom Seymour (my sweet mom-n-law) made her a little care package of some goodies.  Good thing I made a lot of granola, as I kept snacking on it before it actually got shipped out (sorry, Gracie).

  • 1/2 cup oil
  • 1/2 cup honey
  • 1 tsp vanilla
  • 4 cups oats
  • 2 cups any mix of chopped nuts and/or seeds
  • 3 TB Brown sugar
  • Cinnamon (to taste)
  • 1 cup mix of dried fruit (chopped roughly)

Preheat oven to 350.  Grease a large baking sheet.

In a small saucepan over low heat, stir the oil & honey.


In a large bowl, mix the 4 cups of oats, 2 cups of nuts/seeds, brown sugar & cinnamon (do NOT add the dried fruit).


You might think you see some dried fruit in here, and you are absolutely correct. Just ignore it. Do not add the dried fruit until after baking (believe me, I tried it – sorry Gracie, just pick the burnt pieces of craisons out).

Check the oil/honey mixture – is it bubbling yet?  If not, turn up heat a bit.   Once it starts to bubble add the vanilla, then pour over the oat mixture.  Combine and mix thoroughly until everything is coated.

Pour it on the baking sheet, spread it out, and pop it in the oven.  Bake it until it’s slightly golden  – 25 minutes or so, stirring every 10 minutes.


Add dried fruit and let it cool, then store it in an airtight container.



I LOVE my granola with yogurt, and some fruit – it’s so yummy!
